Project description

Nestled in the charming and historic Victory New Village settlement in Pingtung, this project finds its home within a beautifully preserved Japanese-style military officers’ quarter. The initiative was brought to life by a young chef who, after years of extensive travel and mastering the intricate art of French cuisine, returned to his roots with a vision: to transform his hometown into a vibrant new beginning. The design concept artfully intertwines French culinary culture with the rich heritage of the Japanese building, creating a unique narrative that celebrates the harmonious blending of two distinct worlds. As the team navigated the constraints of regulatory guidelines, they opted for a thoughtful low-intervention, reversible "additive" design approach. By incorporating removable components, strategically arranged furniture, and carefully selected materials, they infused the historic space with contemporary functionality, all while honoring the original architectural integrity. This intentional design strategy not only preserves the building’s historic character but also facilitates a natural dialogue between old and new cultures. Ultimately, the project stands as a testament to creative innovation, inviting visitors to experience the seamless interplay of tradition and modernity within the same space.

As one steps inside, they are immediately captivated by the meticulous preservation of low door lintels and the elegant wooden structural proportions that are hallmarks of traditional Japanese architecture. This thoughtful design choice not only enhances the overall aesthetic but also pays homage to the historical significance of the space. In alignment with the original layout, the area featuring a lower ceiling height has been designated as the kitchen's back-of-house, facilitating an effortless flow of movement and efficiency. At the heart of the space lies a central curved bar that seamlessly connects the culinary, dining, and social experiences. Here, guests have the unique opportunity to observe the chef crafting dishes right before their eyes, thus extending the culinary journey from the kitchen to the dining table. This interactive dimension creates a feast that tantalizes the senses—blending visual artistry, exquisite flavors, and engaging experiences.

Moreover, while the design upholds the rational grid-like division characteristic of Japanese architecture, it purposefully breaks from this traditional order through the inclusion of round tables, long communal tables, and timeless vintage furnishings. This deliberate contrast fosters a free-flowing and layered dining atmosphere, inviting diners to enjoy their meals in a more relaxed and inviting setting. Additionally, small, partially partitioned areas provide intimate dining options suited for various occasions—be it lively gatherings, deep conversations, or private dining experiences. Ultimately, this space strikes a remarkable balance between French elegance and Japanese restraint, artfully weaving together contrasting elements to create a unique and harmonious aesthetic that is both inviting and refined.

This project is thoughtfully designed with a strong emphasis on respecting historic architecture through the application of reversible design strategies. By doing so, it aims to not only extend the lifecycle of cultural assets but also to foster a spirit of local revitalization. As a result, this initiative actively encourages young people to return to their hometowns and pursue their careers, thereby reinforcing community bonds. Moreover, these historic homes serve a dual purpose; they not only preserve the cherished memories of their era but also transform into vibrant stages for culinary culture, facilitate meaningful cultural exchanges, and evoke local sentiments. Consequently, this holistic approach seeks to realize the sustainable value of cultural preservation while simultaneously promoting spatial regeneration, ultimately creating a harmonious blend of the past and the future.
